Cooking with "My Main Squeeze" Round 2

So last night we decided that tonight would be round 2 for Cooking with "My Main Squeeze." When we were discussing what we would like to cook, Pudge suggested a "vegetarian" meal. WHAT?!?!? Prior to our marriage, the only vegetable my husband ate was "little green peas," aka English peas. As the years have gone by and the size of his waistline has gone down, he has grown from LIKING "little green peas" to just about LOVING any vegetable! This makes me SOO happy! I am a vegetable girl! But, the boy still loves him some meat and taters! Anyways, after I picked my jaw up off the floor after the vegetarian night comment, I got to looking through recipes to find the perfect recipes for us. We decided to forgo the dessert for tonight in an effort to watch our waistline.

So here was the menu for the evening:

Summer Fruit Salad
Fresh Corn Salad
Summer Chopped Salad with Garbanzo Beans

This meal required LOTS of chopping!

I couldn't find any basil in the grocery store, so I called my sweet friends Chris and Julie. They have a beautiful garden and they were so kind to give us some basil, as well as some bell peppers, cucumbers, mint, and chocolate mint! Mmmm it all smells so yummy! Thanks Chris and Julie!
I love this girl! She was my first discipleship leader in high school and she and Chris did our marriage counseling! Julie you encourage me so much in my walk with Christ and I am so grateful that the Lord put you in my life!

So round 2 was excellent and I'm so glad Pudge made the choice to do a "vegetarian" night. Our favorite salad was the corn salad! Until next month.....

A LOTTA V Time


It's been a little while since my last post. I have been busy the last few weeks going to LaGrange a couple of times helping my brother and his wife move into a new house. They are officially in the "new house," as my sweet niece calls it! On Sunday, my parents came home from LaGrange and brought Virginia home with them! Lindsey, Virginia's mom, let us bring her to Lili's house in Mobile for the week do she could get things at the new house settled and somewhat in place.
Wow, what a week we have had! On her first full day here, we played, ate breakfast, went swimming, and were in the car on the way to the grocery store all by 10 AM! So as you can see we have had a busy fun-filled week! We, meaning me, mom, and my sister, have all been tired by the time evenings roll around! I love hearing her sweet little voice say "Come on Namey," even if it is for the 100th time in a day! (She now calls me "Namey." We think it is a combination of Aunt + Amy.) Virginia LOVES LOVES LOVES to sing, so we have done alot of that this week! Lili sits at the piano and plays "Jesus Loves Me" or whatever else Lili chooses to play and Virginia sits right next to her singing along and playing along on the piano. I will try and upload a video of the duet later! We also have been working on helping Lindsey plan Virginia's 2nd birthday party, which is just a few weeks away! More on that on another day! We were able to take Virginia to Springhill College the other day and snap some pictures of her! I think between my sister and I we got some good pics! Here is that precious girl I have been spending my week with! As you will see, we had a fabulous time together this week! I hope you all have a happy weekend!

Meet My Nephew

Parker Dyson Jacobs made his appearance into this world on 6/1/2011 at 11:16 AM. Parker weighed 9lb. 3 oz. and was 22 inches long. Mom and baby are doing great. Kara did an AMAZING job with the delivery! I hope that childbirth for me will be similar to how it is for Kara. She is a natural!
